It is made not by boiling, but by steeping the ingredients, this not only extracts the flavour but also keeps the nutritional benefits. Finger limes are one of Australia’s eastern coast native fruits. With a small finger shape on the outside, finger limes hide small “citrus caviar” and burst out citrus flavour when popped. They are a great source of folate, potassium, Vitamin E and Vitamin C, which boosts the immune system and delays the ageing of the skin.
Cinchona bark is one of the main ingredients in making of the tonic syrups. It contains quinine, which is historically used to prevent and treat the disease malaria as it's a natural anti-inflammatory. The bark is what gives the tonic its unique bitter flavour.
Mountain Pepperberry grows on a small Mountain Pepper tree and is native to the cool climate of New South Wales, Victoria and Tasmania. It was traditionally used for its antiseptic properties and fruity and spicy flavour. The leaf and the berries contain Vitamin E, zinc, magnesium, calcium and lutein (a compound that plays an important role in eye health and wellbeing). Additionally, the berries can be used for their anti-inflammatory properties.
Strawberry Gum, also known as Eucalyptus Olida, is a tree native to the Northern Tablelands of New South Wales. The indigenous Australians used to chew on the Strawberry Gum Leaves for their sweet berry flavour or use their fragrant oils to calm stomach problems. It is also full of other health benefits such as antioxidant, anti-fungal and antibiotic properties.
We recommend using 1 part syrup to 10 parts of soda water ratio, but if you prefer stronger tonics, feel free to change the ratio. One 500ml bottle will mix up to 5.5 litres of quality tonic water.
Ideal for use with water carbonation devices.
Gin is not required but highly recommended.
